Gordie Howe’s Canadian Bacon Pot Roast

2 T. butter 2 T. corn oil

1 onion, finely chopped 1 clove garlic, minced

2 tsp dry mustard 1/2 tsp cayenne

1/4 tsp ground cumin 2 T. maple syrup

small pinch ground cloves 1/4 C. pear vinegar

1 C. hot water 1 can tomato sauce (8 oz.)

1 4-lb. piece Canadian bacon

1. Use a large iron pot. Put in butter, corn oil, onion and garlic clove and saute until onion is golden brown. Stir in dry mustard, cayenne, cumin, maple syrup, cloves, vinegar and hot water. Blend together over low heat and stir in one can tomato sauce. Put in the piece of bacon.

2. Cover and cook slowly over medium fire about 45 to 50 minutes. Turn bacon several times during this period.

3. To finish cooking, remove bacon from pot, place on a spit and grill over hot coals, basting with the sauce until well glazed.

Serves 6.
